hear stracciatella often referred to as the "Italian egg drop soup," which is fine, but know the name actually means little, rags torn, or cut, much better works metaphorically.?

when you've been run ragged, stracciatella there is always for you. after a long day, infuriating at work, you want something fast, filling, and comfortable. ft perfectly with ingredients you already have at hand . this is all that, and less.

Sure, you can order some take unhealthy, expensive -out, but that's just the cycle of shame waiting to happen. better to hit a few eggs with some cheese, and boil it until the last local chicken broth made, which made using this video.

Incidentally, if you're an ordinary person, and do not have a local broth made in the refrigerator, and this works perfectly well with high quality, packaged broth. As you eat this, and hopefully with some crusty bread for a nice, imagine all those "rags" floating in a small bowl and all your torn up problems, both real and imagined. They were there, and then were gone. I just won, with the soup. I hope that this gives stracciatella again soon. Enjoy!


makes 2 large or 4 appetizer-sized portions:
6 beautiful cups rich chicken broth, seasoned to taste
3 large eggs
2 chopped tablespoon fresh parsley
2 tablespoons semolina flour
1/2 ounce parmigiano reggiano (about 1/2 cup grated if the microplane)
1/2 ounces pecorino Romano cheese ( about 1/2 cup grated if the microplane)
salt and black pepper to taste freshly ground
pinch cayenne
pinch nutmeg
olive oil flakes and pepper to garnish
