makes about 16 toasts shrimp:
1/2 pound raw shrimp, peeled and deveined
1/4 cup diced water chestnuts
1/4 cup chopped cilantro leaves
1/2 cup green onions, sliced finely
3 cloves of garlic, crushed
1 tablespoon grated finely ginger
1 anchovy fillet
1 teaspoon roasted sesame oil
1 teaspoon fish sauce
1 large soy sauce spoon, or more to taste
1 egg whites
1/2 teaspoon of sugar
1/2 teaspoon of paprika
pinch cayenne pepper
a pinch of salt
4 large slices white bread
sesame seeds, optional
vegetable oil for frying
